I've found with some online business previously that if you put up the "SOLD OUT" sign, it increases the attractiveness of what you sell because of its perceived scarcity.Yep, sales go up when you're sold out. It's because people fear they'll miss out.
Like I've always said, people buy for 2 reasons: Fear and Greed.
